There are many ways to hide your journaling but the easiest is a piece of folded card stock. On the inside write your journaling and on the outside put a photo or decorate with patterned paper.

In the above layout I used a photo on the outside and a cardstock sticker of a butterfly was used as both an embellishment and a handle to open the hidden journaling. On half the butterfly on the underside I had to use a scrap of cardstock to cover the pre-glued side.

Sometimes the look of journaling will detract from a simple layout so using this hidden journaling idea is a good alternative.
